Recipe - Coconut Balls (vegan/gf)

This no cook vegan coconut ball recipe is one to make in advance and save in the fridge for a high energy sweet treat.

You will need:

175g shredded coconut
2tsp coconut oil
2 tblsp agave or rice syrup
2 tlbsp coconut milk
1tsp peanut butter
1/2 cinnamon

Blend together all the ingredients with a food processor or stick blender. Using a teaspoon to measure quantity roll your mixture into a littl ball in some extra coconut. Put in a Tupperware in the fridge for 3 hours min to set.
