Recipe - Red Onion Bhajis

This recipe is super tasty and not only simple but vegan AND wheat free!

(Makes approx 6 bhajis)

You will need:
1 medium red onion
300g Gram flour
1 tsp Garam Masala
1 tsp coriander seeds
1tbsp rapeseed oil
100ml cold water
1/2 tsp salt
1/2 tsp turmeric
1/4 tsp chilli powder or cayenne pepper

A small frying pan
200ml rapeseed oil to shallow fry

Sieve gram flour into a mixing bowl and add all other dry ingredients. Mix in the tablespoon of oil plus water and beat with wooden spoon. Add a little more water if needed as batter should be a thick pouring consistency. Chop onion finely and add to batter.

Heat the 200ml oil in pan and fry 1 tbsp of mixture per bhaji. As the batter heats up its magically puffs up and turns golden brown. flip and fry on both sides for 2/3 mins each then rest on a kitchen towel to get rid of excess oil.

Instead of coriander seeds why not vary this recipe and try black onion seeds or fennel seeds.
You can make the same batter without the onion for Pakora and coat and fry veg like courgette, aubergine and broccoli in the mixture. Delicious!
