beetroot bonanza!


We have a very small garden at the Cottage, tiny. Dispite this, i have faught against all sorts of beasties to fill this little square of concrete with as many vegetables as one can grow in 4 wooden draws from a set Ridder was chucking out. This includes....purple sprouting broccoli, onions, butternut squash, courgette and last but by no means least, beetroot! With this in mind i have searched high and low to find a kick ass beetroot cake recipe.I bloody love the stuff! so here is the best i have found so far...i have tweeked it a little of course.

8oz SR flour
1oz cocoa powder
1tsp baking powder
4 oz caster suger
pinch salt
4oz dark choc, melted (70% cocoa solids is best)
3oz butter, melted
4oz raw grated beetroot,
2 eggs
1oz toasted almonds (optional)
icing sugar to dust

so...heat oven at 180'c and grease and line a baking tin. A small loaf tin isprobably best, or a small but deep round cake tin.
Mix together all the dry ingredients in a nice big bowl.
Now stir in the eggs, betroot, melted choc, butter and eggs. yum!
# Stir well please.
Now spoon mixture into your chosen tin and bake for 50 to 60mins or until you can poke it with a skewer and it comes out clean. Easy.

when its cooled its best to let it sit in a cake tin for a day. ha ha, yeah right!

courgette, lemon and poppy seed cake is also very nice...maybe that'll be next.

note to self- adding beetroot does not make this a healthy option!
